An original and creative interpretation of the ancient Gran Galup recipe, inspired by a classic dessert of Piedmontese tradition: stuffed peaches. In the dough, candied peaches and whole drops of extra dark chocolate, with Italian Hazelnut “Tonda Gentile Trilobata” glaze covered with a delicious crumbly amaretto granule.
Ingredients:
Wheat flour type “0” - Candied peach cubes 15% (Peach - Glucose/fructose syrup - Sucrose - Concentrated lemon juice) - Butter (milk) - Sugar - Yolk of fresh category A eggs from free-range hens - Chocolate chips 7% (sugar, cocoa paste, cocoa butter, emulsifier: soy lecithin) - Natural yeast (Type “0” wheat flour - Water) - Emulsifiers: mono and diglycerides of fatty acids - Fresh whole milk - Inverted sugar syrup - Salt - Honey - Glucose/fructose syrup - Barley malt extract - Natural flavors - Natural Bourbon vanilla flavor.
Glaze 12%: sugar - Category A fresh egg whites from free-range hens - Tonda Gentile Trilobata hazelnut 9% - Rice flour - Rice starch - Impalpable sugar (Sugar - Wheat starch) - Sunflower seed oil - Natural flavors.
Garnish 3%: sugar - Apricot almonds 18% - Egg white of egg - Lactose and milk protein - Flavors - Raising agent: sodium hydrogen carbonate. Contains sulfites.
