Oveja Flores (ewe with flowers) is made in the famous region of La Mancha, well known for its Manchego, in Spain. The milk used to produce this cheese is rich and earthy, with an almost lanolin silkiness, which confers a unique and pure white paste to the Oveja Flores.
Aged for at least 4 months, it has a dense texture which melts in the mouth. It is then covered with shredded flowers native to the region, giving off floral aromas in a wonderful display of colours.
FLAVOR : Oveja Flores has delicate notes which come from the sheep milk; it is mild with a slight tinge of lanolin and floral aromas are given off by the flowers that serve as the rind.
HOW TO ENJOY : Perfect on a cheeseboard for its beautiful paste and rind. Pair it with something not too overwhelming as to not overpower the flavour which is nice but quite delicate.
