Made exclusively from fresh goat's milk collected in Poitou Charentes, the Crottin d'Antan is moulded by hand by ladling the curds into individual moulds. It is then drained in a traditional manner and aged in a ripening room for about 15 days, just long enough to express all of its flavours.
FLAVOUR: Known for its piquant taste, it can be eaten at various stages. When young, it is tender in texture, becoming harder, dry, crumbly, and sharp as it ages. HOW TO
